Dr Atkin – who was he?

Robert C. Atkins, M.D., was the founder and medical chair of The Atkins Center for Complementary Medicine, in New York City. A 1951 graduate of the University of Michigan, Dr. Atkins received his medical degree from Cornell University Medical School in 1955, and went on to specialize in cardiology.

Receipe Name: Cheese Bread

Serves: makes about 8 slices
Calories: about 1 carb/piece
Prep Time: 15mins
Effort: Easy

Ingredients:
1 cup soy Flour
1 tsp. Baking Powder
1/2 tsp. salt
1 1/2 cup shredded Cheese (I like the mix shredded cheese)
1 slightly beaten egg
1/4 cup heavy whipping cream

How to Prepare:
Sift dry ingredients. stir in cheese. Combine egg and cream. Pour mixture over dry ingredients and mix. Rollout dough in 8×8″ and cut into approx. 1 inch pieces. Place the pieces on an ungreased baking sheet and I sprinkle garlic powder on top and add a little bit more cheese for extra taste. (optinal) Bake at 350 degrees for about 10 mins. Its yummy!!

Receipe Name: Cheese Bread
Serves: 6
Prep Time: 45 minutes tops prep & baking
Effort: Easy

Ingredients:
14 oz pkg frozen cauliflower
1cup grated Mont. Jack cheese
1 cup sour cream
4 oz chopped green chilies
4 tbsp butter, melted, divided
1 tsp salt (if desired)
1/4 tsp pepper
3/4 cup pork rinds, crushed

How to Prepare:
In a large bowl combine cheese, sour cream (I only used about half of the sour cream), chilies, 2 tablespoons butter, salt & pepper, mix thoroughly. Gently fold in slightly defrosted cauliflower florets until well coated. Spoon into greased 2-1/2 qt baking dish. Add remaining butter to crushed pork rinds and mix until crumbly. Sprinkle over vegetables and bake uncovered at 350 degrees F for about 30 minutes or until brown and heated throughout.
Very good. Also good reheated.

Receipe Name: Low Carb Noodles

Effort: Average

Ingredients:
2 extra large eggs 1/2 cup soy flour 1/2 tsp salt 2 tablespoons additional soy flour
3 quarts water 1 1/2 tsp salt

How to Prepare:
Beat eggs thoroughly with a fork or wire whisk. Add soy flour and salt and mix well. Place a large sheet of waxed paper on a flat surface, or use a wooden board if you have one. Sift a tiny amount of the extra soy flour all over the waxed paper or board. Place the dough on the waxed paper, making sure that all surfaces, top and bottom, get a light coating of the soy flour (you can use high gluten wheat flour here as well for a few carbs extra.) Roll out the dough with a rolling pin until very thin. (The French rolling pins without handles work best here.) Try to roll the dough into a rectangular shape. Work fast! Beginning with the narrow end, gently fold over about 2 inches of dough and continue turning like a jelly roll until the roll is about 3 inches thick. Dough should be dry enough so layers do not stick together, but should not have a heavy coating of extra soy flour. With a very sharp knife, cut rolled dough in even slices – 1/4 inch wide for fettuccine and as desired for other pasta (wide noodles for gravy mixtures should be cut about 1/2 inch wide.) Unroll strips carefully so as not to break them, and arrange on waxed paper, keeping flat. The noodles may be left to dry for 1-2 hours, or cooked immediately. To cook, bring water to a rolling boil. Add salt and put in the pasta, pushing it down gently until all is submerged in the water. (A little oil added will keep the pasta from sticking.) Cook to the al dente stage, testing frequently to make sure the pasta does not overcook. (Al dente means tender but still firm to bite.) Drain pasta thoroughly in a colander and use it with your favorite pasta recipe. Makes 4 servings. 6 carbs per serving (if using high glutten flour, 7.5 carbs).

Receipe Name: Cheese Crisps – Like yummy cheese crackers!

Ingredients:
2 tbsp. shredded cheddar (1 oz.)
2 tbsp. shredded Parmesan cheese (1 oz.)

How to Prepare:
Combine cheeses in a bowl. Using 1 tablespoon cheese mixture for each, place the cheese on a non-stick cookie sheet, spread cheese into circles about 2 inches wide, spacing circles about 2 inches apart. Bake in a 325 degree oven for 10-12 minutes or until the cheese begins to brown. Allow to cool for 30 seconds on cookie sheet and then remove to cool on a wire rack.
